Apple-Cinnamon Pancakes

Ingredients:

  • Apple Cinnamon Pancakes Nutrition1 cup rolled (old-fashioned) oats
  • 8 egg whites or 1 cup purchased egg whites
  • 1⁄2 cup low-fat (2 percent) cottage cheese
  • 11⁄2 teaspoons vanilla extract
  • 1⁄2 teaspoon ground cinnamon
  • Nonstick canola oil cooking spray
  • Poached Cinnamon Applesauce or 1⁄2 cup no-sugar-added applesauce
  • Ground cinnamon (optional)
Directions:

Combine oats, egg whites, cottage cheese, vanilla, and the 1⁄2 teaspoon cinnamon in a blender. Cover and blend until smooth. Mist a nonstick skillet or griddle with nonstick cooking spray. Heat skillet over medium heat for 2 minutes. Cook 2 to 3 large pancakes (one at a time if using a small skillet) until large bubbles appear on the surface. Turn pancakes and continue cooking until browned. Top with Poached Cinnamon Apples or applesauce. Sprinkle with additional cinnamon, if desired. Serves 2 to 3.
