Using a fork, poke several holes in a baking potato. Microwave for 7 to 8 minutes. Broil 1 to 2 minutes to make skins crunchy. Cut a slice from top of potato. Scoop out inside. Combine potato and 1 tablespoon Smart Balance® Buttery Spread or light sour cream. Spoon potato mixture back into potato shell, if desired. Serves 1.
