Broiled Salmon Dijonnaise
Ingredients:
2 tablespoons whole grain mustard
- 2 tablespoons light mayonnaise
- 1⁄2 teaspoon chopped fresh thyme
- 1⁄2 teaspoon chopped fresh rosemary
- 1 clove garlic, minced
- 4 salmon fillets (4 to 6 ounces each)
- Freshly ground pepper
- Lemon wedges
Directions:
Preheat broiler. Mix mustard, mayonnaise, thyme, rosemary, and garlic in a small bowl. Line a baking sheet with foil. Place salmon fillets, skin sides down, on foil. Coat the top of each fillet with the mustard mixture. Broil the fish 6 inches from heat for 5 to 7 minutes or until the tops are browned. Check for doneness; if the fish needs to cook a little longer, turn off broiler and let stand in hot oven for a few more minutes until cooked through. Season to taste with pepper. Serve with lemon wedges. Serves 4.
