Chinese Chicken Salad
Ingredients:
3 cups torn romaine lettuce
- 2 cups finely shredded napa cabbage
- 1⁄2 cup shredded carrot
- 1⁄2 cup bean sprouts
- 2 scallions, sliced
- 1⁄4 cup chopped cilantro
- Chinese Chicken Salad Dressing
- 2 4-ounce skinless, boneless chicken breast halves, cooked and thinly sliced
- 2 tablespoons slivered almonds (optional)
- Lime wedges (optional)
Directions:
Toss lettuce, cabbage, carrot, bean sprouts, scallions, and cilantro in a large bowl. Add dressing and toss again to blend. Divide between 2 plates. Top with sliced chicken and, if desired, sprinkle with almonds. Serve lime wedges on the side, if desired. Serves 2.
