Curried Chicken Salad in Papaya

Ingredients:

  • Curried Chicken Salad1⁄2 cup plain fat-free yogurt
  • 1⁄2 teaspoon mild curry powder (or more to taste)
  • 8 ounces cooked chicken or turkey breast or cooked small shrimp
  • 1⁄2 of an apple, chopped
  • 1 ripe papaya, halved and seeded (or 1⁄2 of a cantaloupe)
  • 2 teaspoons chopped fresh cilantro
  • Lime wedges
Directions:

Mix yogurt with curry powder until well blended. Taste and, if desired, add more curry. Fold chicken and apple into yogurt mixture. Scoop chicken mixture into each papaya half and garnish with chopped cilantro. Serve lime wedges on the side. Serves 2.
