Fish in a Packet
Ingredients:
4 cups fresh spinach (packaged spinach is a timesaver)
- 4 fish fillets such as cod, sea bass, or halibut (4 to 6 ounces each)
- 1⁄2 cup white wine or chicken broth
- 11⁄2 tablespoons olive oil
- 4 lemon slices
- 1 tablespoon minced garlic
- Freshly ground pepper
Directions:
Preheat the oven to 375°F. Cut four 12-inch squares of foil. Divide spinach among foil squares. Top with a piece of fish. Distribute the wine, olive oil, lemon, and garlic evenly over the fish. Gather up the sides of each foil square to form a packet and fold the edges over tightly to seal. Place the packets on a baking sheet. Bake in preheated oven for 15 to 20 minutes, depending on the thickness of the fish. Transfer packets to plates; open carefully. Season to taste with pepper. Serves 4.
