Cajun Grilled Chicken Breasts or Turkey Cutlets

  • 4 skinless, boneless chicken breast halves or turkey cutlets (1 pound total)
  • 2 tablespoons olive oil or canola oil
  • 1 tablespoon seasoning (mild chili powder, curry powder, Italian herb mix,
  • jerk seasoning, Cajun seasoning, or low-sodium soy sauce)

Flatten chicken slightly with the palm of your hand or a heavy skillet (see Note, page 202). Rub chicken breast halves with the oil and sprinkle on both sides with the seasoning of your choice. Let rest while you heat a grill pan, a barbecue grill, or a heavy nonstick skillet to medium-high. Cook chicken on each side for 4 to 5 minutes or until golden brown and cooked through. Serve with any of the salsas on pages 215 to 217. Serves 4.
