New Orleans-Style Halibut

Ingredients:

  • New Orleans HalibutNonstick canola oil cooking spray
  • 4 halibut fillets (4 to 6 ounces each)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons canola oil
  • 1⁄2 teaspoon Cajun-style seasoning
  • Chopped scallions (optional)
  • Lemon wedges
Directions:

Preheat oven to 425°F. Mist a foil-lined baking sheet with nonstick cooking spray. Place fish on baking sheet. Mix mustard, canola oil, and Cajun seasoning in a small bowl. Spread mustard mixture evenly over fish. Bake in preheated oven for 15 minutes or until fish is cooked through. Sprinkle with scallions, if desired. Serve with lemon wedges. Serves 4.
