Ricotta Cheese Sandwich
- 1 slice whole grain bread (such as Ezekiel 4:9® or Rudi’s Organic Bakery®)
- 1⁄4 cup low-fat ricotta cheese
- 1⁄3 cup sliced fresh fruit (pear, apple, peach, or plum) or 1⁄4 cup dried fruit (snipped figs, apricots, or dates)
- Cinnamon, nutmeg, or lemon zest (optional)
Toast bread and spread with ricotta cheese. Top with fruit. Sprinkle with cinnamon, if desired. Serves 1.
