Chinese Chicken Salad Dressing
Ingredients:
1 quarter-size piece peeled fresh ginger
- 1 small shallot, peeled and cut into quarters
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon canola oil
- 1 tablespoon rice wine vinegar
- 1 heaping teaspoon Dijon mustard
- 1 teaspoon honey
- 1 teaspoon toasted sesame oil
- A few drops hot chili oil (optional)
Directions:
Using a mini food processor, finely mince ginger and shallot. Add remaining ingredients and process until blended. (Or finely chop ginger and shallot; whisk in the remaining ingredients.) Serves 2.
