Quick-Fix Sandwich

Directions:

Spread 2 tablespoons hummus, ricotta cheese, or peanut butter over 1 slice whole grain bread (such as Ezekiel 4:9® or Rudi’s Organic Bakery®). Top with veggies (lettuce, chopped cucumber, chopped tomato, chopped bell pepper). Season to taste with freshly ground pepper. Serves 1.
