Tuscan Bean and Tuna Salad

Tuscan Bean and Tuna Salad


  • Tuscan Bean Tuna Salad7 ounces water-pack tuna (in a can or pouch), drained
  • 1 cup cooked green beans
  • 1⁄2 cup canned cannellini beans, rinsed and drained (or shelled edamame)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 6 cups torn salad greens
  • 2 tablespoons chopped parsley
  • 2 scallions, chopped (optional)

Place tuna in a large bowl; flake with a fork. Add green beans and cannellini beans to tuna. Drizzle with olive oil and lemon juice and toss gently to coat. Arrange salad greens on 2 plates. Divide tuna mixture and place on top of salad greens. Garnish with a sprinkling of parsley and, if desired, scallions.

Serves 2.
