Spinach Fix-Ups


  • Toss 1 cup fresh spinach with 1 tablespoon olive oil, 1⁄4 cup crumbled feta cheese, and 1 minced garlic clove.
  • Combine 1 cup fresh spinach, 1⁄2 cup low-fat milk, 1⁄4 cup fat-free cottage or ricotta cheese, salt, and ground pepper in a small casserole. Bake in preheated 350°F oven for 15 minutes or until it’s nice and crunchy on top.
  • Top 1 cup fresh spinach with 1⁄4 cup pine nuts and 1⁄4 cup ricotta cheese.
